The yellowfin tuna is fished by sustainable methods in the North East Atlantic in a fishing programme controlled by the Eart Island Institute dolphin-safe program. Factory ships and dragnets are not used. The tuna shoal is located by echo sounder and caught in a purse seiner net. The nets have large meshes to allow small fish to escape. Unwanted fish or sea mammals if caught in the net are sorted on board and returned to sea on a slide.. There is therefore no bycatch and fishing is restricted during certain periods of the year. The tuna is not frozen but kept on ice and then packed immediately on landing.
